Vegan Gado Gado with Sun-Dried Tomatoes

Gado-gado is a dish that originates from Indonesia, consisting of lightly boiled or steamed veggies, served together with a peanut sauce. Considering my love for peanut butter, and the fact that Robin is part Indonesian, it may come as no surprise that this meal is on weekly rotation in our home. Robin's addition of sun-dried tomatoes to this is not something traditionally used, but it's incredibly divine!

Ingredients

Gado-gado

  • 1 Tbsp (15 mL)
    vegetable oil
  • 2
    medium onions, diced
  • 4
    cloves garlic, thinly sliced
  • 2 cups (336 g)
    mock "chicken" pieces, torn into shreds
  • 4 cups (400 g)
    green beans, ends trimmed, cut in half
  • 1 cup (240 mL)
    boiling water
  • 1 cup (200 g)
    uncooked white rice
  • 2
    bell peppers, chopped
  • ⅓ cup (50 g)
    sun-dried tomatoes in oil, drained, chopped
  • ⅓ cup (80 mL)
  • 2 tsp (10 mL)
    sambal oelek (or more if you like the heat)

Peanut sauce

  • ½ cup (120 mL)
    peanut butter
  • ⅓ cup (80 mL)
    water
  • 1
    clove garlic
  • 1 Tbsp (15 mL)
  • ½
    lime, juiced
  • 1 tsp (5 g)
    brown sugar

Directions

  1. Add the oil, onion, and garlic to a sauté pan on high heat. Cook for 5 minutes.
  2. Add the mock chicken pieces. Continue to cook until lightly golden, about 5 minutes. Then transfer to a bowl.
  3. Add the green beans and boiling water to the now-empty pan. Cover with a lid and cook at a gentle simmer for 7 minutes.
  4. Meanwhile, cook the rice according to the package instructions.
  5. Add all the ingredients for the peanut sauce to a small food processor and blend until smooth*.
  6. Add the bell pepper to the pan with green beans. Cover and cook for 5 more minutes. A bit of remaining water is fine, but drain any excess beyond 1- 2 Tbsp.
  7. Add the onion and mock chicken mixture back into the pan, along with the sun-dried tomatoes, soy sauce, and sambal. Cook until heated through.
  8. Serve with rice, top with the peanut sauce, and enjoy!

  • * Alternatively, mix all of the ingredients in a bowl, with the garlic crushed in.

Jackfruit goes really well with this if you don't have access to a vegan chicken alternative.
If you live in Germany, I highly recommend to try the Aldi Süd (vegan) "Wonder Chicken". It's perfect for this dish.

This is another wonderful surprise recipe for me! I picked this one on a whim, simply because I was looking for something different, and needless to say, I've found another regular rotation! I didn't realize how flavorful simple ingredients could be. I did end up substituting tofu for the mock chicken, browning it in a skillet on its own before cooking anything else, and it turned out great! I sent a photo to my fiancée and she made me promise to add it to our rotation once we're married, so I think this is going to work out perfect!

Hey Michelle, great Q. You can definitely swap the mock meat for potatoes or eggplant. Traditional gado gado is made using peanuts, but you could definitely try almond butter. I can't say with confidence what the combo of ingredients would taste like without trying it myself, but I imagine it could work :P

This was so delicious and will soon be one of your favorite dishes! The dried tomatoes / peanut combination is so odd, yet so great.

When making the peanut sauce it only became really thick almost instantly when turning on the food processor. It basicly became ready to use Dutch Saté sauce which only needs water or (plant based) milk to make it liquid. It tasted great however. I've used a 100% peanut butter so maybe that's the issue...?

We used 100% peanut butter as well, but if the sauce doesn't seem thin enough, indeed you can just add a bit more water or plant milk, that always does the trick 🙂

Have been using this for years now as the only recipe for beans. Sometimes I add another vegetable, like cauliflower or carrot, if I want to make more. The sauce also works without the brown sugar if you add carrots, as they are a little sweet naturally. My low carb flatmate approves of this with carrots and cauliflower rice.

I like how you add some water to steam/help the veggies a bit. The sauce is the game changer for me. I use noodles because the leftovers work so well for a portable lunch the next day. I love pick up limes recipes but I have to say this was a fail for me. I followed the instructions to add the soy sauce but I feel like it was too much (1/3 cup for 4 servings). I like my food quite salty but this was barely edible because of how salty it was - I had to rinse out the food. I couldn't taste any of the flavors because of how salty it was. I used a soy sauce that isn't too high in salt either. Could you please explain where I went wrong?

If so, we suspect it may have to do with the soy sauce brand or another packaged product as these can sneak in a lot of hidden salt. We're happy to try to get to the bottom of it further though if possible 😊

I think you maybe used a different kind of soy sauce? In this recipe I think you need the Sweet ketjap Manis. At least; that's what I've been doing and it works great! Hope you'll try it again, it's my favorite dish !

So completely awesome! I've made it a couple of times. I'm not able to get the mock chicken meat so I subbed in mushrooms (which I love)🤤😋 I've eaten it over rice or greens or in a soft sandwich bun. I think it would be delicious over noodles or tofu or in a wrap. I never even got the sauce made because it's was so good!

I was planning to cook this recipe yesterday, but forgot to buy peanut butter! But because there is always a "nut" butter available home, I experimented with a quite successful swap: almond butter (white, without the skins). I was amazed by the flavour of this sauce, it was tasting somehow like a salty marzipan!
You may want to try it out, too (in a future recipe or so),

This has become a regular on our week menu. easy to make, peanut butter <3, great taste.
We use 'poulettekes' from the vegetarische slager (vegatarian/vegan butcher) for this and it's just a perfect combo with the rest

I love this, I'm doing it from time to time and it's always nice to rediscover. As others have mentioned, the mock chicken can be replaced with for example tofu, I have also tried with both soy and quorn bites which have worked well.

Anything satay and I’m there! This recipe is such a burst of flavour, and the sun dried tomatoes are A MUST!! This ones a really fun recipe for when you’re cooking with multiple people too, there are enough steps to allocate and everyone can get involved :)

This one was amazing, I was not sure how it was going to be but I absolutely loved making this one. I omitted the vegan chicken though and just did it with veggies and it was a crowd-pleaser.

If I use tofu instead of the mock chicken would you press it and then make separate or would I follow the recipe as written?

A great question, Heather, if substituting for tofu we'd recommend using extra firm or firm and pressing it beforehand. You could still sautee it on the stovetop although it will likely take closer to 10 minutes to get all sides nice and golden.

Another option could be to bake the pressed tofu in the oven while making the rest of the recipe and add it in at the end 🙂 We hope this helps and let us know how it goes!

I also used tofu: extra firm. However the brand purchased was not 'super firm' and I did not take the time to press. Followed recipe as written: the tofu didn't not brown. Probably if cooked alone, after or before doing the onions, and sauteing for at least 10 mins as the PUL team already suggested the tofu would get all golden.

Even without the brown/toasty tofu, this recipe was excellent! Only slight modification was to the sauce: omitted the sugar and bumped up the lime and garnished with Thai basil ( the basil plants are bumping this summer). Will cook again1
