This pizza is for my carb-on-carb lovers. Plus the roasted garlic makes a delicious base for the savoury potatoes and crisp arugula. A winning pizza all the way.

Directions

Click:

  1. Preheat the oven to 350°F (180°C).
  2. Place the pizza crust on a flat sheet, and lightly coat with olive oil.
  3. Place the roasted garlic onto the crust and mash it using the back of a fork, distributing it evenly over the crust.
  4. Slice the potatoes as thinly and evenly as possible. We want the potatoes to cook in the same amount of time it takes to cook the crust. Layer the sliced potatoes over the garlicky crust.
  5. Sprinkle the thyme and salt over the pizza.
  6. Bake in the center rack of the oven for 10 - 15, or until the crust is golden and the potatoes are cooked through.
  7. Remove from oven and top with the sun-dried tomatoes, olives, roasted pine nuts, and arugula. Slice and enjoy!

Storage

  • Best if enjoyed right away. Otherwise, store it in an #airtight in the fridge for up to a day.
