This pizza is for my carb-on-carb lovers. Plus the roasted garlic makes a delicious base for the savoury potatoes and crisp arugula. A winning pizza all the way.

Directions

  1. Preheat the oven to 350°F (180°C). Place the pizza crust on a flat baking tray, and lightly coat with olive oil.
  2. Place the roasted garlic onto the crust and mash it using the back of a fork, distributing it evenly over the crust.
  3. For the potatoes to cook in the same amount of time it takes to cook the crust, be sure to slice the potatoes as thinly and evenly as possible. Layer the potatoes over the garlicky crust.
  4. Sprinkle the thyme and salt over the pizza.
  5. Bake on the centre rack of the oven for 13 - 15 minutes, or until the crust is golden and the potatoes are cooked through.
  6. Meanwhile, combine the sauce ingredients in a small bowl.
  7. Remove the pizza from the oven and top it with the arugula, sun-dried tomatoes, olives, and roasted pine nuts. Drizzle over the tahini sriracha sauce, and enjoy!
