Roasted Garlic, Potato & Arugula Pizza

25 min

This pizza is for my carb-on-carb lovers. Plus the roasted garlic makes a delicious base for the savoury potatoes and crisp arugula. A winning pizza all the way.

  • 2
    medium ready-made pizza crusts
  • 2 tsp (10 mL)
    olive oil
  • 2
    small potatoes
  • 1¼ tsp (1 g)
    dried thyme
  • 1 pinch
  • 1 cup (20 g)
  • 5
sun-dried tomatoes in oil, drained, chopped
  • 10
    kalamata olives, pits removed, chopped
  • 3 Tbsp (25 g)
    roasted pine nuts

Tahini sriracha sauce

Try homemade

  1. Preheat the oven to 350°F (180°C)*. Place the pizza crust on a baking tray and lightly coat with oil.
  2. Place the roasted garlic onto the crust and mash it using the back of a fork, distributing it evenly over the crust.
  3. To ensure the potatoes cook as quickly as the crust, slice them very thinly and evenly. Then layer them over the garlicky crust.
  4. Sprinkle the thyme and salt over the pizza.
  5. Bake on the centre rack of the oven for 13 - 15 minutes, or until the crust is golden and the potatoes are cooked through.
  6. Meanwhile, combine the sauce ingredients in a small bowl.
  7. Top the baked pizza with arugula, sun-dried tomatoes, olives, and pine nuts. Drizzle over the sauce, and enjoy!

  • We used top and bottom heating (not fan-assisted/convection).

  • Best enjoyed fresh out of the oven.
  • Store leftovers in the fridge for up to 1 day.

This was so good! Instead of the tahini sauce I made chipotle mayo. Will definitely make this pizza again.

Really nice, especially the dressing was fantastic! I think I would try to add a little more potato next time, I could not really taste it :) I accidentally bought Tarte (Flammkuchen) dough instead of pizza dough, also worked out nice!!

Delicious! Used the homemade dough recipe as well and it was sooo good (despite a few mistakes I made). Seems like this will become a staple :)

This is delicious. Use a flat bread or pitta bread to make individual portions .

Delicious! Tried this for the first time tonight because I love arugula as a pizza topping, and this has easily become a new favorite! All the ingredients work together beautifully.
