Vegan Reuben Tofu Sandwich
This is our vegan take on the classic Reuben sandwich, a deli staple traditionally made with corned beef, Swiss cheese, sauerkraut, and Russian or Thousand Island dressing. We kept the essentials - tangy sauerkraut, melty vegan cheese, and a rich, flavourful sauce - while replacing the meat with smoky, paprika-seasoned tofu. Though the original is served on rye, any bread you love will work just as well!Servings

Very yummy, flavorful, filling sandwich! I had never had a Reuben sandwich before, so this was an exciting new adventure. First I thought that we can't make these because we don't have a grill, but they turned out really nicely on a griddle, too. We'll make these again for sure!
It was delicious. I marinated and cooked with smoked tofu and I feel like it went well with the sauce. :) I thoroughly enjoyed my lunch.

Absolutely delicious and flavorful! One of my new favorites, I was so excited when this was posted. I couldn't find horseradish paste but found it in little shreds in the produce aisle and that worked just fine.
How could I have gone so long without discovering the wonders of horseradish paste?!

This recipe is absolutely delicious - so creamy, cheesy, packed with flavor and really filling…I love Reubens and this is my first go at a meatless version - fantastic!
We made this today with the side of buffalo style cauliflower wings and let me tell you this toast hit the spot. The best part was the horseradish spread. The tofu marinade was amazing and sauerkraut an unusual but surprisingly delicious addition. All in all 10/10 recipe!!
