This is our vegan take on the classic Reuben sandwich, a deli staple traditionally made with corned beef, Swiss cheese, sauerkraut, and Russian or Thousand Island dressing. We kept the essentials - tangy sauerkraut, melty vegan cheese, and a rich, flavourful sauce - while replacing the meat with smoky, paprika-seasoned tofu. Though the original is served on rye, any bread you love will work just as well!

Absolutely delicious and flavorful! One of my new favorites, I was so excited when this was posted. I couldn't find horseradish paste but found it in little shreds in the produce aisle and that worked just fine.

We made this today with the side of buffalo style cauliflower wings and let me tell you this toast hit the spot. The best part was the horseradish spread. The tofu marinade was amazing and sauerkraut an unusual but surprisingly delicious addition. All in all 10/10 recipe!!
