Sauce

  • 2 Tbsp (30ml)
    vegetable oil
  • 1½ Tbsp (13g)
    all-purpose flour
  • 2 cups (480ml)
    unsweetened soy milk
  • vegetable bouillon cube, crushed
  • ¼ tsp
    chili flakes (optional)
  • ⅛ tsp
    ground black pepper

Filling

  • 1 Tbsp (15ml)
    vegetable oil
  • 1
    medium onion, diced
  • 2
    garlic cloves, minced
  • ½
    medium broccoli, broken into bite-size pieces
  • 2⅓ cups (385g)
    cooked chickpeas
  • 2 cups (220g)
    frozen mixed vegetables

Topping

Optional garnishes

  • fresh parsley
  • lemon slice

Directions

  1. Preheat the oven to 400°F (200°C)*. Heat the oil in a saucepan over medium-high heat. Stir in the flour, whisking constantly, until golden, about 2 minutes.
  2. Whisk in the remaining sauce ingredients and and continue to stir until the mixture has thickened, about 8 - 10 minutes.
  3. Heat the oil in a cast iron skillet over medium-high heat. Add the garlic and onion and cook for 3 - 4 minutes, until lightly golden.
  4. Turn off the heat and add the remaining filling ingredients.
  5. Pour the sauce over everything and mix until evenly coated.
  6. Arrange the frozen potato tots in a single layer over the top.
  7. Bake for about 35 minutes, or until golden.
  8. Serve with any desired garnishes. Enjoy!

Notes

  • For us, ½ broccoli weighed about 300 g.
  • We used a mix of peas, corn, and bell peppers.
  • We used top and bottom heating (not fan-assisted/convection).

Storage

  • This is best enjoyed immediately from the oven, but can be stored in an airtight container in the fridge for up to 3 days or in the freezer for up to 2 months.
  • Freezing tips: The prepared, unbaked casserole can be stored in the freezer for up to 2 months. For best results, we recommend assembling this in a casserole dish rather than using the skillet. Follow the baking instructions provided, adjusting the time as necessary to achieve a golden topping.

I enjoyed this recipe but found that my tater tots got soggy sitting on top of the veggies + sauce. I’ll still keep this in my rotation but will separate the tater tots next time.

I ended up storing the tater tots separately and reheating them on broil to get them nice and crispy again the next day.

Hi there, Michelly! We used a 9-inch / 23cm cast-iron skillet for this recipe. If you’d like to double the recipe, a big casserole dish is often easiest and gives very similar results. The main difference is that the sides of a casserole dish aren’t as hot as a cast-iron dish. The flavour won’t change, though, and it’ll still bake well 🤗 Hope this helps for now ✨

Honestly one of the easiest and best dinners I’ve ever made! The tater tots are perfectly nostalgic, but it’s made healthy with all the veggies added in! The sauce is so creamy and cheesy tasting. The only thing I’ll do differently next time is salt the veggies a bit, but this one will be going into our regular rotation! It’s such a pretty dish to serve for company with a salad and a PUL dessert!

Tried this one last Saturday and it was a success. It was a rainy cold day and this dish was perfect to feel warm and cosy.

Even the non-vegan's in the house liked this recipe. Finding vegan tots was a bit hard and I was about to go with a mashed potato topping when I found ABC Rösti. The cute letters made for a fun topping and we of course spelled out some words for the top. :)
I didnt like chasing the chickpeas around the plate so next time I will probably squash them just a bit before adding.

I made this last night for my nanny family.

My thoughts:
1. This is a SUPER easy meal to make.
2. I used whole milk, extra garlic cloves, and extra seasonings. I was told it was just enough seasoning!
3. The main comment was that the chickpeas will still pretty hard, and the texture was inconsistent with the veggies.

This was so delicious! Like chicken pot pie but without the death. I think the tater tots added the crunch and flavor to really elevate the dish. The only alteration I made was adding vegan parm in the sauce instead of nutritional yeast since my partner doesn't like it. Will definitely be making this many times.

Hey Anjali! To make the mashed potatoes hold a circular shape, you could try to pipe them into the chickpea mixture. Potato tots have an outer crispy layer that helps them hold their shape and gives a crispy texture, which might be tricky to replicate with mashed potatoes, although mashed potatoes as a topping to this dish are delicious! (it's similar to a shepherd's pie). For a little extra crunch, maybe spritz the top of the potatoes with some oil before baking. Let us know how it goes if you try it! ☺️

I just downloaded the app and this is the first recipe I’ve tried, the tots spoke to me. I made it exactly as written, except I transferred it to a 9x13 glass baking dish because my cast iron pan is too small, and it was delicious! I thought it was well seasoned. Everyone loved it, including my toddler. I’ll definitely be making this again!

I made this as the veggie main for friendsgiving and it was absolutely demolished. I subbed the milk for vegan cooking cream and broccoli for spinach and it was just delicious.

This was tasty and comforting and nostalgic, like a hug from my childhood even though we never had tater tot casseroles. That said, I found I had to add quite a bit of seasoning to the sauce- salt, a lot more pepper, white pepper, soy sauce, miso, thyme and brown mustard. I did leave out the nooch because it gives me horrible heartburn, but I don’t think that could have affected the lack of seasoning so much.

I would still recommend it, but be sure to taste the sauce before you add it to the veggies, and adjust to your liking.

Little disclaimer: I had to change the recipe so my rating is perhaps not accurate.
I didn't have potato tots or anything similar in. I thought that I could slice potatoes and put those on top and it turned out that I didn't have those in either. I had already done the filling at this point. After a deep rummage in my freezer I found some purple sweet potatoes and they worked brilliantly. I also added some all around potato seasoning (from Just Spices) to the veg because of what some have already mentioned in the reviews. This also turned put really well. Frozen broccoli was a success as was a little oat cream poured over the potatoes before baking.
All in all, I loved this dish. It's so versatile and has given me a base to create similar oven dishes which make it easier for me to be away from the stove and be with my family. This was particularly good food for leaving on the worktop to cool while I left for work knowing that my child had lots of veggies for dinner and that the babysitter could serve up with ease.

Very delicious. I don’t like mixed veggies, so I did full corn. This dish was so good. My husband and I did find it was lacking in some additional spice. Once served, we added some salt and the PUL chick’n spice. It definitely added the additional flavor we were looking for.

My husband LOVES tots, so we had to make this! So fun and really easy. I did struggle to get the sauce to thicken though… I’m not sure if maybe I had the heat too high or too low?

If you use unseasoned tots, I recommend adding some salt and pepper on top at the end, too.

A proper winter tea 😁 So tasty and really easy to make. We don't have potato tots here, so I was going to sub those with potato croquettes. Typically the only ones in stock at the supermarket were the ones with cheese in them, so I used frozen roast potatoes instead. They worked really nicely, and next time I'll see if I can get some cheese free croquettes and see if they work! Really enjoyed this meal 💙

Delicious and easy to prepare. This dish has a bit more "prefab" ingredients than I'm used to from pickup limes but it is a very easy to prepare and easy to impress dish.
