Really love this recipe, so easy to make as well. It’s so soft, moist and tasty. It freezes really well (I sliced 4 slices to take a slice to work during the week) and it’s a good snack with coffee in the morning. Might be my new favorite recipe. I used a mix of macadamias, hazelnuts, cashews and pecans because that’s what I had. Didn’t make the glaze but it was pretty perfect already without it.

I've only used 140 gr of pineapple, but pff. Best banana bread I've ever made. The icing was also super delicious!

How do you get the icing to be so white? Mine was a little transparent

Hey hey, Alex! Thanks for your interest in the recipe 🤗 If your icing looked a little transparent, it was likely slightly too thin. Warm weather can also soften the icing and make it appear more translucent. Next time, try adding a little more powdered sugar, or slightly less coconut milk, until it’s thicker and more opaque. You can also pop it in the fridge for a few minutes before using it. We hope this helps! 💛

Absolutely delicious!! This will definitely be a regular treat in my house. I did not have macadamia nuts, but I did have pecans and they worked quite well.

Love the cake texture and flavour, next time i will definitely use more pineapple, and maybe some applesauce instead for the banana because it was a bit overpowering :)

Hiii Jadamarie! 😊 A refined olive oil can work, as it has a much milder flavour than extra-virgin olive oil (but do note it will still impart a bit of an olive oil flavour). I wouldn't recommend extra-virgin olive oil, since its stronger flavour can come through in the finished loaf. Hope this helps 💛
