Really love this recipe, so easy to make as well. It’s so soft, moist and tasty. It freezes really well (I sliced 4 slices to take a slice to work during the week) and it’s a good snack with coffee in the morning. Might be my new favorite recipe. I used a mix of macadamias, hazelnuts, cashews and pecans because that’s what I had. Didn’t make the glaze but it was pretty perfect already without it.

Hey hey, Alex! Thanks for your interest in the recipe 🤗 If your icing looked a little transparent, it was likely slightly too thin. Warm weather can also soften the icing and make it appear more translucent. Next time, try adding a little more powdered sugar, or slightly less coconut milk, until it’s thicker and more opaque. You can also pop it in the fridge for a few minutes before using it. We hope this helps! 💛

Hiii Jadamarie! 😊 A refined olive oil can work, as it has a much milder flavour than extra-virgin olive oil (but do note it will still impart a bit of an olive oil flavour). I wouldn't recommend extra-virgin olive oil, since its stronger flavour can come through in the finished loaf. Hope this helps 💛
