These crispy air-fried stuffed olives are tiny bites of magic. Each one is golden, crunchy, and packed with a savoury feta stuffing. The air fryer makes them perfectly crisp without the hassle of deep frying. They're delicious, addictive little snacks. Honestly, it’s hard to stop at one. Serve them warm, and watch them disappear.

Ingredients

Tofu 'feta' stuffing

Olives

  • 1½ cups (175g)
    pitted green olives
  • 4
    spritzes of cooking oil spray

Dry coating

  • 3 Tbsp (25g)
    all-purpose flour
  • ½ tsp
    garlic powder

Wet batter

  • ⅓ cup (45g)
    all-purpose flour
  • ⅓ cup (80ml)
    unsweetened soy milk

Breading

  • ½ cup (55g)
    bread crumbs
  • ¼ cup (14g)
    panko bread crumbs
  • ¼ cup (32g)
    raw sesame seeds

Serves well with

  • ketchup
  • hot sauce

Directions

  1. Add all the ‘feta’ ingredients to a small food processor and blend until smooth.
  2. Transfer the mixture to a piping bag, or to a ziplock bag, then snip a small corner off and pipe a bit into each olive. Preheat the air fryer to 400°F (200°C)*.
  3. Prepare three small bowls. In the first bowl, mix together the dry coating ingredients.
  4. In the second bowl, whisk together the wet batter ingredients.
  5. In the third bowl, combine the breading ingredients.
  6. Dip each stuffed olive into the dry coating, making sure it’s evenly covered. Then, dip the olive into the wet batter, letting any excess drip off.
  7. Finally, roll the olive in the breading mixture until fully coated.
  8. Place the olives in the air fryer basket and spritz with cooking oil.
  9. Air fry for 12 minutes, or until golden, shaking the basket halfway through**.
  10. Serve warm as-is or with a dipping sauce of your choice. Enjoy!

Notes

  • Refined coconut oil is coconut oil that doesn't smell or taste like coconuts.
  • * If baking in the oven instead, preheat to the same temperature using the fan setting rather than conventional top and bottom heat.
  • ** If using an oven, bake for 17 - 20 minutes total, or until golden.

Storage

  • Best when enjoyed on the day they're made (especially warm!).
  • Leftovers can be stored in an airtight container in the fridge for up to 1 day.

Can I use black olives instead of green ones?

Heyy Violeta! You can use black olives if that’s what you have and love. The taste will just be a tad different. If you want a bit more punch, a tiny extra splash of vinegar or a pinch of salt in the filling can help balance things out as well, as black olives can be a bit less salty/sour 🥰

I used green olives in the end (personally I love the black ones but this time I just went with the recipes) - Made them for my kids’ Christmas party at school and they were a hit! all parents’ asked for the recipe :) amazing snack
