Ingredients

  • ½ Tbsp (7 mL)
    olive oil
  • 2
    red bell peppers, quartered
  • 1
    orange bell pepper, quartered
  • ¼ tsp
    salt, divided
  • ⅛ tsp
    ground black pepper, divided
  • ½ Tbsp (7 mL)
    olive oil
  • 4
    cloves garlic, minced
  • 1
    zucchini, thinly sliced
  • 14 oz (400 g)
    dry spaghetti noodles
  • ¼ cup (38 g)
    sun-dried tomatoes in oil, drained
  • ¼ cup (31 g)
    roasted walnuts
  • 1½ cups (207 g)
    frozen green peas

Optional garnish

  • fresh parsley
  • fresh basil
  • roasted walnuts

Directions

  1. Add the oil to a large pan on high heat. When hot, add the bell peppers in a single layer. Sprinkle over a bit of salt and pepper. Cook until blistered, then flip to cook on the other side*.
  2. Push the blistered bell peppers to the side of the pan. Add more oil and cook the garlic until lightly golden, about 2 - 3 minutes. Transfer everything to a food processor or blender.
  3. Return the same pan to the heat, and add more oil and zucchini. Sprinkle over salt and pepper, and try not to disturb the zucchini as it cooks. Flip only when golden. Meanwhile, cook the pasta in a large pot of salted boiling water.
  4. Returning to the food processor, add in the sun-dried tomato, and walnuts. Blend until smooth, but some small chunks can remain, if desired.
  5. In the last two minutes of the pasta cooking, add the peas to the cooking water. When the pasta is al dente, drain. Then return the drained pasta to the pot. Add the cooked zucchini and blended red bell pepper mixture to the pot. Toss everything to coat.
  6. One heated through, serve while hot. Garnish if desired, and enjoy!

Andrea - April 3, 2024, 12:37 a.m.

Could I substitute the walnuts for sunflower seeds?

PUL Team - April 3, 2024, 1:34 a.m.

Hey Andrea, yes you can use roasted sunflower seeds in place of the walnuts! In case you haven't already seen it and are interested, pressing the little green arrow beside ingredient names shows possible substitutes 🤗

Andrea - April 4, 2024, 9:03 p.m.

Ohh didn’t know that, that’s cool thanks ☺️

Hummus Queen - Feb. 21, 2024, 11:16 a.m.

Absolutely delicious! I did a weird substitution so I'm sharing it here: I was out of sun-dried tomatoes but still had the jar with oil, so I used 1 tbsp tomato paste (for the rich umami taste) and 2 tbsp sun-dried tomato oil. Worked out very well!

V - Jan. 10, 2024, 2:39 a.m.

This came out delicious. I skipped the zucchini as I didn’t have any but the taste was still great.

Catrin - Jan. 7, 2024, 7:33 p.m.

😍

Nina - Jan. 6, 2024, 1:31 p.m.

I teached 28 young adults about healthy food and how to cook at home last week. It was an online workshop. I encouraged them to try one of about 50 recipes (I made a collection) and THIS was choosen 5 times - no other recipe was :D I just wanted to let you know that. They all were super happy with the result <3 I also made this a lot in the past few month and want to say thank you :)

PUL Team - Jan. 8, 2024, 11:54 p.m.

Aww how cool to hear about the workshop, Nina! We're honoured that the pasta was part of the experience and so popular 🥰

Amy - Jan. 4, 2024, 10:55 a.m.

Amazingly easy and delicious! I’ve had this on regular rotation for a long time now. I use pine nuts instead of walnuts due to nut allergy. One of my fav PUL recipes 👏

PUL Team - Jan. 4, 2024, 10:22 p.m.

Yayy we're so happy to hear you're enjoying the pasta, Amy! Pine nuts are a lovely idea to change it 🤗

nandini - Dec. 19, 2023, 1:42 a.m.

This pasta is easy to make and really delicious. I couldn’t find my walnuts so I added pine nuts instead and it came out great. Will definitely be making it again!

PUL Team - Dec. 19, 2023, 6:52 a.m.

Yay! So happy the pasta was enjoyed with pine nuts, Nandini, thank you☺️

CHEN Cai - Nov. 17, 2023, 5:12 p.m.

This might just be the easiest and tastiest pasta dish I have made my entire life

dennisa - Oct. 17, 2023, 7:47 p.m.

Such a nice, easy and filling recipe! Totally fell in love with it 🤩 from now it’s on my cooking list. 🫶

Phillipa - Sept. 3, 2023, 8:05 p.m.

Really lovely when I got to the sauce but it lacked a little bit of body so I pan fried some smoked tofu slices to go on top. O think next time I need to use fresher vegetables and less pasta.
I love that it has walnuts in.

Kanagha Kumar - Aug. 27, 2023, 2:59 a.m.

Came out delicious! Used roasted bell peppers make it quick. Forgot to get zucchini so used mushrooms instead.

Sonia - Aug. 13, 2023, 9:31 p.m.

I absolutely love this recipe. Very easy to prepare and absolutely delicious. To recommend !

merle - July 25, 2023, 1:37 p.m.

Very nice! Forgot to buy peas so I added spring onions instead. Everyone at the table was happy with the dish!

PUL Team - July 26, 2023, 11:56 p.m.

A delicious idea, Merle, thank you :D

Gabriela - July 19, 2023, 10:45 a.m.

One of my favourite go to recipes! Always tastes amazing, thank you!

Rachel - July 6, 2023, 6:07 a.m.

Delicious recipe! I omitted the peas and switched the type of pasta cause of personal preference and it ended up great :) honestly maybe felt like more than 4 servings! Lots of great left overs

Natalie - June 26, 2023, 7:50 p.m.

Love this recipe! I swapped the fresh bell peppers for roasted bell pepper from the glass to speed things up a little. This could easily become a favorite weeknight dinner.

Lieke - June 26, 2023, 6:23 p.m.

Hmm, we found this to be a bit underwhelming. The pesto was quite bland and it was not enough to get a creamy pasta. It was a bit dry. I used fresh bell peppers and roasted them as instructed. Maybe it’s more flavorful with store bought grilled peppers.

Lucie Fialová - June 26, 2023, 5:44 p.m.

My first recipe 😊 delicious 😋

Teresa Santos - June 2, 2023, 2:35 p.m.

Amazing

Martunia - April 3, 2023, 8:05 p.m.

So simple and really good 👍 The pesto is such a unique idea!

Radhika - March 21, 2023, 2:25 p.m.

Loved the recipe! I made it for some friends and everyone loved it. I used roasted bell peppers from a jar to reduce the preparation time

Tori Kirchhoff - March 10, 2023, 5:20 p.m.

The recipe was easy to make and at the end scrumptious, many thanks! <3

Athina - March 6, 2023, 3:46 p.m.

Great recipe!

Mariana - Feb. 27, 2023, 11:51 p.m.

I love this recipe, which I've done multiple times!! 😋

Dagmar - Jan. 6, 2023, 9:54 p.m.

My boyfriend, who is a body builder and swears he needs his protein badly, dug in and exclaimed 'oh, my god, this is body building food. And it's sooo good.' It made me so proud.
For extra protein I added three times the nuts using cashews and walnuts. To the pesto, I added nutritional yeast.

PUL Team - Jan. 7, 2023, 11:28 a.m.

whoop whoop! 💪🙌

Tori Kirchhoff - March 10, 2023, 5:22 p.m.

Uhhh, I have to try your extras! <3 Greetings from Hamburg

Dagmar - March 10, 2023, 5:49 p.m.

I hope you'll like it as much as I did! X from the Netherlands

Orlanne - Aug. 9, 2022, 10:05 p.m.

This meal was good, quick and easy. I used a romano pepper instead of a bell pepper but I didn't really taste it in the end... I was looking forward for this taste so I'm a bit disappointed. I will give it another go and if not, I'll add more spices to make it more tasty!
Also I added some water in the pepper paste to make it like a sauce rather than a dry paste. Enjoy it overall :)

PUL Team - Aug. 10, 2022, 1:40 p.m.

Hey Orlanne, thanks for taking the time to share! Roasting the peppers well and possibly adding a little less pasta can help the sauce shine through. The flavours are diluted when adding water so you could also experiment with adding a touch more of the peppers or sun-dried tomato. Otherwise adding more spices is a lovely idea 😃

Orlanne - Aug. 10, 2022, 1:53 p.m.

Thank you very much for your piece of advice! I will try that next time 😋

Lilie - June 8, 2022, 7:18 p.m.

Amazing ! My only regret is to have wait a couple months to try this out ! Wholesome, delicious and reconforting recipe !

PUL Team - June 9, 2022, 6:03 p.m.

Better late than never, Lilie 🤓 so happy it was enjoyed!

blake - April 21, 2022, 4:55 p.m.

Need advice,
The recipes I've tried are amazing. I used to live in a dry desert climate in California, and all the recipes I cooked there tasted amazing. Recently I moved to Texas where it is humid. I noticed that when I cook now, the recipes taste more bland. I want to know if there's any way to make it more flavorful again? Is the climate changing how the food cooks?

PUL Team - April 22, 2022, 5:17 a.m.

Hey Blake, how exciting to hear about the recent move! We hope it's settling smoothly. With humidity, food may dry a tad slower and different elevations may also impact our taste sensitivity (here is a sample study on the topic: https://pubmed.ncbi.nlm.nih.g…). Perhaps it could also be a difference in the quality of ingredients, so we'd recommend using fresh vegetables, herbs and spices if possible. Allowing food to dry out more, adding more spices to taste, and a bit of time may be helpful during this transition period. We hope this helps for now 😃

Naomi - March 11, 2022, 4:33 a.m.

This is so delicious. I swap the walnuts for almonds. I also do skip the half-moon zucchinis and instead swap half the pasta (or 70% pasta) for zoodles. This way I can hide the zucchini and make this a vegetable-centric versus carb-centric meal. My kids, who don't eat zucchini, don't even notice because it's all covered in this amazing red sauce! They don't usually eat peppers or tomatoes either. I am so happy to serve them something they love that is so good for them and enjoy the meal too!

PUL Team - March 11, 2022, 4:55 a.m.

Thanks for sharing your take on the pasta, Naomi, we're glad it was enjoyed by your little ones 😊

Elisa - Feb. 28, 2022, 3:37 p.m.

Wow thank you for making these recipes Sadia. Today I tried out a few of your delicious recipes but this pasta dish was so so yummy! I have to serve this dish to my family too, they will definitely love it:)

PUL Team - Feb. 28, 2022, 8:36 p.m.

We appreciate the kind words so much, Elisa! We hope your family loves the pasta as well 😊

Florentina - Feb. 16, 2022, 7:59 p.m.

This dish was really delicious and a keeper😋.

Lately, I've been trying out many PUL recipes and this one reminds of one meal served at one of my fav healthy and vegan restaurants. The only thing that doesn't work out for me is that the sauce doesn't become really saucy but instead chunky. I think it would be even more delicious if all the noodles were evenly coated, but it has got to do with my food processor, which has only 300W.

Thank you, Sadia and all the PUL Team, for this great recipe.

P.S. sorry that I've been commenting so much lately, but I want everyone to know how great PUL is🥰😊.

PUL Team - Feb. 16, 2022, 10:25 p.m.

Hello Florentina! We're so happy to hear pasta was enjoyed. Perhaps the addition of water to the sauce can help thin it out a tad with the less powerful blender. And please don't apologize, it means SO much to hear your experiences with the recipes and it's beyond appreciated, Florentina 🥰

Clari - Jan. 31, 2022, 12:28 p.m.

Love this pasta, the pesto is really yummy and easy to make. I always like to try new things to cook with pasta dishes, and this is one of my favorites recipes!

PUL Team - Jan. 31, 2022, 8:03 p.m.

A massive compliment, Clari, thanks a bunch!

Vaishnavi - Dec. 25, 2021, 11:24 a.m.

I just tried this recipe. This is the first time I have cooked something by myself and I knew I could trust you guys. For a first timer it was excellent, and my family said they really loved it. Thank you so much for this, I can't wait to try the other recipes!!!!

PUL Team - Dec. 25, 2021, 7:51 p.m.

Aw a huge congratulations on doing it all on your own, Vaishnavi! We're so happy your family enjoyed it. Happy cooking 🎉

Ana-Claudia - Dec. 3, 2021, 4:17 p.m.

Loved it 😊 usually my boyfriend cooks pasta but this time I really wanted to try out this one and we both love it! I wanted to have some more leftovers for the week, but it didn’t last long :)) You are my go-to when I want to cook 😊 Thank you Sadia ❤️

PUL Team - Dec. 3, 2021, 10:44 p.m.

We're so happy to hear the pasta was enjoyed, Ana-Claudia, thank you! Hugs to you and your boyfriend 🤗

Diana - Nov. 22, 2021, 6:22 p.m.

Great recipe, thank you for sharing! I added broccoli instead of courgettes and green lentils instead of peas. The sauce is amazing. Will be making it again!

PUL Team - Nov. 22, 2021, 8:58 p.m.

Ooo thank you for sharing your modifications with the recipe, Diana! Delicious ideas ✨

Nhi - Nov. 22, 2021, 11:39 a.m.

We love this recipe. Yet, we used aubergine instead of courgette and it goes so well with the pesto.

PUL Team - Nov. 22, 2021, 8:51 p.m.

Mmm a wonderful substitution idea, Nhi, thank you!

Leah - Nov. 14, 2021, 11:25 p.m.

Great recipe! Just recently bought a new foodprocessor so we tried this recipe out for a family dinner and it was a hit! Even though all of my family love their meat and were skeptical, they loved it! It's very easy to make aswell, especially when you use the jarred peppers aswell like we did. I did add some extra salt to it for myself and ommited the peas (did try them with the peas but didn't like the taste a lot), so I think next time I might try it with some brocolli which I love a lot and saw someone else mention in the reviews. Either way would totally recommend this! It's quick and easy, healthy, packed with nutrition and very easily adjustable vegetable wise aswell as the taste isn't overpowering! So excited to try out more of your pasta recipes :)!

PUL Team - Nov. 15, 2021, 12:50 a.m.

We're so grateful that the pasta was enjoyed, Leah, thank you for taking the time to share your experience with it! Happy cooking ✨

Kaylin - Nov. 1, 2021, 9:22 p.m.

Absolutely amazing dish. Made it for the first time today. I love it and will definitely make it again!

Kim P. - Nov. 1, 2021, 9:15 a.m.

Hi, Sadia! You mentioned the sauce will keep in the fridge for 3 days but is it okay to freeze it? I would like to make a bigger batch, if possible. Thanks!

PUL Team - Nov. 4, 2021, 1:02 a.m.

Hi Kim, thanks for the question! We haven't tested it out so we can't say with certainty, although we imagine it would freeze well. Generally, pasta sauces freeze nicely in an airtight container for up to 3 months. You could let it thaw in the fridge or heat it up before enjoying 😊 We hope this helps for now!

Doutsen - Oct. 20, 2021, 6:02 p.m.

I replaced the green peas with roasted broccoli. I also replaced the walnuts with cashews and added some union. But wow, it was so so delicious. Even my father loved it though he hates pasta. Thank you so much Sadia!

PUL Team - Oct. 21, 2021, 1:42 a.m.

Mmm delicious substitutes, Doutsen, thank you for sharing 🤗

Janne - Oct. 7, 2021, 6:17 p.m.

I added a base of baby spinach on my plate before serving. And drizzled some hemp seed and flax seeds on top.
Really delicious and easy.
Thanks Sadia for another great recipe.

PUL Team - Oct. 8, 2021, 7:25 p.m.

Ooo that sounds very yummy! Thank you for taking the time to share, Janne ✨

Peter - Oct. 5, 2021, 4:55 p.m.

I replaced green peas with baby spinach and added fresh red chili along with garlic and it's just ridiculous how simple and tasty this is. Thank you for such an awesome recipe!

PUL Team - Oct. 6, 2021, 3:37 a.m.

Mm thanks for sharing your substitutions, Peter! So happy the recipe was enjoyed :)

Melany - Sept. 30, 2021, 6:10 p.m.

Since I didn’t have walnuts or sunflowers, I used almonds and it gave it a nice taste! I’ll be doing this recipe more often.

PUL Team - Oct. 1, 2021, 6:42 p.m.

Thanks for sharing the substitute, Melany! Happy cooking ✨

Luci - Sept. 14, 2021, 6:46 a.m.

So delicious! Added some red pepper flakes for a kick :)

Nat - Sept. 12, 2021, 3:49 p.m.

I used a small fresh tomato instead of the sun dried tomatoes, and cooked the peppers in the broiler instead of on the pan. I also peeled off the charred skin of the peppers. It was pretty good!

PUL Team - Sept. 12, 2021, 8:20 p.m.

All lovely ideas, Nat! Thanks for sharing your experience with the pasta ✨

Clare - Aug. 31, 2021, 3:43 p.m.

Great recipe!

Clara - Aug. 28, 2021, 9:35 p.m.

Delicious and easy pasta recipe !! Also a great way to use any other veggies which you still might have in your fridge. 10/10 :))

The pesto featured in this recipe is really good! Great pasta dish.

Annamária Gálik - Aug. 17, 2021, 9:18 a.m.

I was surprised how sweet and full of flavours this meal without suger or any sweetener, its amazing how good and healthy at the same time! I cook only for myself so this portion provides me food for days and I can not be bored with it! And the scent in the house during the cooking is absolutely a big plus ;) Oh yeah, and it is not hard to make or takes a long time at all.

PUL Team - Aug. 19, 2021, 6:04 p.m.

We're so thrilled you enjoyed the pasta, Annamária, thank you!

Sam - Aug. 15, 2021, 1:18 a.m.

This recipe looks delicious, really looking forward to trying! My partner hates peas, is there any other veggie you would recommend as a substitute?

PUL Team - Aug. 15, 2021, 10:57 p.m.

Hey, Sam! You could omit the peas or replace them with any veggies you and your partner enjoy. Some ideas that may pair well are carrots, cherry tomatoes, spinach, mushrooms or more bell peppers/zucchini. We hope you enjoy the pasta 😃

Katta-Triin - Aug. 6, 2021, 5:43 p.m.

I'm newly vegetarian (planning on going vegan someday) and I've been loving salivating while looking through your videos for quite sometime, but when i saw this recipe i knew i had to try it. And I'm so glad i did! It's delicious and makes me feel so good knowing that I'm not eating just another soy burger. Mine didn't come out as saucy as in the video but I'm positive it was because i made too much spaghetti, but overall it's a true delight. I will be taking this into my menu for sure, Thank you!♡

PUL Team - Aug. 7, 2021, 2:45 a.m.

Hi, Katta-Triin 🙂 We're so glad you enjoyed the pasta - it's super easy to add extra dry pasta! Thank you for the review and for allowing PUL to be part of your journey with food 🌻

I keep coming back to this recipe all the time. It's just so good!

Caitlen - July 8, 2021, 9:42 p.m.

Abso-friggin-loved this recipe! It was a lot of effort with the whole grilling red peppers thing, and I have a tiny food processor so I had to do it in batches, but it was SO worth it. Thanks so much for the yummy and creative ideas, PUL!

PUL Team - July 12, 2021, 5:11 a.m.

We're so glad the labour of love was worth it! Thank you, Caitlen 🤩

PUL Team - July 7, 2021, 7:14 a.m.

Hello Ellbell! Thank you for the question. Were you looking for a substitute for walnuts? We'd recommend sunflower seeds based on our taste preferences, although almonds would also work 😃

Hey PUL Team, loved the recipe. I have tried making it a few times already and have enjoyed it each time. When there are bell peppers in the fridge, this is my go-to recipe. It is so hearty and delicious.
Thank you for addicting a university student to cooking. 😋

Such an incredible review - thank you, Aditee! Best of luck with your studies ✨🤗

Mayra - June 1, 2021, 10:06 p.m.

Loved how easy and delicious this recipe is! Question: how long is the pesto good for in the fridge?

PUL Team - June 5, 2021, 1:20 a.m.

Hi Mayra! Lovely question. The pesto should stay fresh in an airtight container in the fridge for 3-4 days 🙂

Hi PUL Team! I only have pecans on hand, can you substitute walnuts for pecans in the pesto here?

PUL Team - May 1, 2021, 7:23 p.m.

Hey Crystal! Feel free to use pecans in place of the walnuts. We hope you enjoy the recipe 🙂

So, my mom, brother and myself try to have dinner once a month. Every time I have to cook (we rotate each time) I have no clue on what to make. My brother doesn’t eat meat, I don’t eat dairy and my mom is quite a picky eater so I decided to make this for dinner and oh my goodness! It was such a hit! I can’t believe how good it tasted, especially coming from eating meat all the time. I did add sautéed onions along with some red pepper flakes. It was so good! Thank you so much for having such a great recipe. I also love your cake in a mug recipe too. I am definitely going to try to incorporate more of a vegan lifestyle in my diet. Again, thanks so much. Love your videos.

PUL Team - April 26, 2021, 6:36 a.m.

Aww how nice of your family to have dinner once a month, Brittany! We're so glad that a PUL recipe was enjoyed during your special dinner. All the best with your journey ✨😃

Natascha - March 28, 2021, 9:42 p.m.

Was delicious! It took me a bit longer but I guess next time I will be faster. My daughter liked it also, this way she gets some more nutrients without knowing. 🤭

PUL Team - April 2, 2021, 10:29 p.m.

We're so glad you and your daughter enjoyed this one, Natascha! Being a bit more familiar with the steps hopefully will help the prep time shorter next time 😃

I made this today and it was delicious! Your site is fabulous. Thanks for all of your work in putting it together. I loved pictures that followed the recipe, so I could confirm I had cut up all of the veggies as expected. I'm looking forward to trying out more of your recipes.
