Sometimes biting into a plain apple doesn’t quite feel like it will satisfy your sweet craving, so I like to jazz it up with some nut butter, granola, or cinnamon…or all three! You’ll be surprised at how quickly you breeze through eating a whole apple (or two) by switching it up this way. Plus you’ve now added extra protein and fats that will keep you satiated longer.
This recipe is so incredibly simple (not to mention fun to make), I’m not even sure I should call it a ‘recipe’. It has modest ingredients and takes less than 10 minutes to put together.
Pro tip: switch up the type of granola you use each time for added variation. Try pecan cranberry granola one day, and a roasted cashew and coconut granola the next. This way, you can change up the same recipe and you’ll never get bored of it.
Take it to a potluck, have it while you’re studying or working or turn it into an apple-wedge-making-party with the little ones in your life.
Nutty Granola Apple Bites
▸ ▹ Vegan, gluten-free, oil-free, refined sugar-free
Yield: approx. 16 wedges
Prep Time: 10 min
Total Time: 10 min
2 apples, sliced into wedges (I used red and green)
1/4 cup (65g) roasted hazelnut butter, or other nut butter
1/4 cup (30g) granola, store-bought or homemade
1/4 tsp (1g) cinnamon
1/4 cup (40 g) dairy-free dark chocolate (optional)
Lightly coat apple wedges in hazelnut butter, then dip in granola and sprinkle on cinnamon.
Melt chocolate in microwave, stirring every 20 seconds until melted, about 1 minute. Be careful not to overheat.
Drizzle wedges with melted dark chocolate. Enjoy!
Variations: add an extra dash of seeds such as hemp or dried fruit such as raisins, if desired.
Speed it up: serve the chocolate on the side.
Storage: store in an air-tight container in the fridge for up to one day.
