Delicious, and much easier to make than I expected. I can imagine trying this out with lots of different spiced fillings-- this version paired very well with a simple red lentil soup.
I meal prepped several for the week ahead with success. From my experience with other flatbreads, I was afraid they would become hard if I cooked them fully in advance. So rather than cooking for 4 minutes on each side, I cooked for just 1-2 minutes per side, just so they would keep their shape for storage. Stored in an airtight container, I finished cooking them about 3 min per side when I was ready to eat. This worked out quite successfully. c:
Would this work with spelt flour ?
I added 1 cup of OKARA (soybean pulp from making homemade tofu) to the dough! Let's see how it goes!
