Vegetable Noodle Stir-Fry with Peanut Lime Sauce

We packed as many crunchy veggies into this stir-fry as we could. There are no wrong vegetables for this dish! If you've got mushrooms, green beans, radish, or cabbage - toss it in! This recipe is a great way to use up any veggies you've got in the fridge.

Ingredients

Stir-fry

  • 6.2 oz (175 g)
    dry soba noodles
  • 1 Tbsp (15 mL)
    vegetable oil
  • 2
    medium shallots, minced
  • 2
    cloves garlic, minced
  • 2
    carrots, julienned
  • 2
    bell peppers, julienned
  • ¼
    head of red cabbage, thinly sliced
  • ¼ cup (34 g)
    roasted unsalted cashews, chopped

Peanut sauce

Optional garnishes

  • toasted sesame seeds
  • fresh cilantro

Directions

  1. Cook the noodles according to the package instructions.
  2. Add the oil to a large pan on medium-high heat. When hot, add the shallots and garlic. Cook for about 2 minutes, or until lightly golden.
  3. Then add the carrots, bell peppers, and cabbage. Cook for 2 more minutes.
  4. Meanwhile, add all the sauce ingredients to a mason jar. Mix.
  5. When the noodles are cooked, drain and add to the pan of vegetables. Pour the sauce mixture on top and toss to combine.
  6. Serve with the roasted cashews and garnish as desired. Enjoy!

Storage

  • Store the sauce and stir fry separately in airtight containers in the fridge for up to 3 days.

An amazing recipe! I'm not a fan of stir fry but I was intrigued by the stir fry sauce and what a hit it was with my husband. I was sceptical of the veggie to boodle ratio but it worked. I was surprised by the assembly of the ingredients prior to cooking, it didn't take long at all. The lime is definitely a game changer. I did substitute peanut butter with Tahini, sriracha with gochujang and I drizzled some chilli oil just before serving. A recipe I'm going to have on repeat.

Hey, Sam! It's possible that the type of noodles you used contained a higher starch content, which can make the dish turn out sticky. We recommend dry soba noodles or brown rice noodles as listed in the recipe.

To help prevent the noodles from sticking together, you can rinse them under cold water after cooking to remove excess starch. You can also toss them with some oil to coat them and separate long strands. We hope this helps for now 🤗

Hey Keren, you could consider using either plum sauce or teriyaki sauce as both of these are sweet and tangy and can replicate some of the flavours in hoisin sauce. Otherwise, you can consider adding a bit of miso paste (not the same amount though, start with just under half, you can always increase to taste) or consider a splash more soy sauce.

Really easy to prepare, healthy, and delicious. The red cabbage is not something I would have thought of but works really well. We sometimes add broccoli, julienne some courgette and a few sugar snap peas, and a bit less bell pepper than suggested. This looks delicious! I've become slightly allergic to peanuts (I'm told its a carb sensitivity and not a protein allergy, since it's not an anaphylactic reaction) with bloating and inflammation. COuld any of your peanut sauce recipes be used with almond butter instead? I saw one commenter said they used tahini. I'm curious.

Sadia, this recipe was wonderful and super quick and easy to make. It was a hit in my household. I did do a different version of the peanut sauce, which I've included here in case you want to give it a go. This version of peanut sauce is great for dipping with those salad rolls too.

Peanut sauce: 5 Tbsp peanut butter, 2 Tbsp (22 mL) sodium-reduced soy sauce, 3 medium cloves garlic, 2 Tbsp Thai red curry paste, 1-2 tsp tamarind paste, 1-2 Tbsp (15 mL) sriracha hot sauce, 3 Tbsp vegetable oil, 1 Tbsp agave syrup or honey, a squeeze of lime (optional) 1/4 cup water (as needed to thin the sauce to your liking). Just pop all the ingredients in a blender.

I tried this recipe when you first featured it and have always loved it. Just thought I would share something as well :) Last week, I decided to make a batch of the cabbage and carrot on its own in the sauce for meal prep. I then paired it with brown rice/quinoa & tofu or tempeh on 3 different days throughout the work week; and i LOVED it. I never got bored of the flavor profile & crunch. I am trying the same approach this week, but swapping out different vegetables to have some variety. <3

I wanted to use red cabbage I had in a fridge but I had almost no ingredients for the sauce- I mixed honey, soy sauce, tahini and hot paprika powder and limes and it still was delicious! Can't wait for orginal recepie as I am sure it will be amazing :) thank you for boosting up my creativity! ;)

Great recipe! We often make it when we have guests for dinner.

A question, can I substitute the agave syrup with a date? I have a friend coming over who eats paleo and she cannot have agave or maple syrup.

Hi Kim, we're so honoured it's enjoyed with guests! You could omit the syrup from the sauce and see how you like it. If it needs a touch of sweetness for balance, then pure (100%) maple syrup, dates (date syrup might work a bit better) or an alternative sweetener should do the trick. We hope this helps for now 🙂

Stumbled across this on the channel and had everything in the fridge so decided to give it a go. Being gluten-free, I served it over brown rice instead of noodles and added some tamari pan fried firm tofu. This sauce is delicious and left me feeling very satisfied. I will definitely be adding this one to the rotation!

This recipe looks scrumptious. My stomach is growling and thinking of making this noodle dish soon. I currently don't have any Soba noodles. Do you think it is okay to use Star Anise brand brown rice noodles which is the only noodles I have for now?

Thank you for this recipe. We love the taste of it so much. It combines three of my husbands favourite ingredients: peanut butter, sesame oil and chilli ... so I was sure he would like it, when I made it the first time. And he did like it :-)! So much, that he thought about how to use the sauce with other ingredients. So yesterday we had it with bell peppers, carrots and bean sprouts on top of rice. While eating we realised that it reminds us of the Korean bibimbap ... which is one of my favourite dishes. So, thank you again!

my absolute go to recipe. It's quick, easy and versatile because you can just use what is in season or some frozen vegetables. The sauce was interesting. It is not like any sauce I have had in the past. It's acidic in a good way, creamy and thanks to the hoisin has a lot of depth in it. If the PUL Team sees this then please know that I would be delighted by more such sauces. I just love new flavours <3

This recipe has a special place in my heart as it was my introduction to Pick Up Limes in 2019. My friend made it for me and told me about the PUL videos and ever since then I haven't looked back!
I make this recipe at least once a month and it is among my favourites for it's ease and simplicity and ultimately, it's taste! I love colourful meals and, to me, this meal is perfection.
Fun fact: I had disliked peanut butter my whole life until this recipe converted me!

(TLDR; This is probably my favorite recipe I’ve tried so far!) As a meat eater, never in my wildest dreams would I have imagined following a vegan for recipes. Not only do I do that, the PUL team is the ONLY team I follow for recipes! Everything I’ve tried so far is so so good! I’d love to eat less meat, and I feel like I’ll get there sooner with this team. I went out and bought all of these sauces to make this dish. Worried a bit, because I NEVER use hoisin sauce, soy sauce, or sriracha in my home. (Video idea! Recipes for those random items in the home!) Tried this recipe and BAM! Instant love. I had to force myself to stop eating noodles it was SO GOOD!!! I can’t have noodles everyday of my life though, haha. What to do with all the extra sauces?

This has been on regular rotation in our house since it came out. The sauce is perfection! I normally stretch it a bit with some broth which I add to the noodles at the end as needed. Absolutely love this! I was missing hoisin sauce so I used Tamarind sauce instead, as well as using Maple syrup instead of agave syrup. Still delicious. Thank you so much, I keep recommending your channel and webpage to everyone!

Quick question, I want to try this recipe but I'm not able to get my hands on the hoisin sauce and sriracha hot sauce needed for the peanut sauce. I think they are simply just not available where i live. Can i leave them out without it affecting the taste much?Or are there any other substitutes?

Aww you're too sweet, Hazel, thank you! That's a great question. The hoisin and sriracha help give the sauce a bit of a kick but aren't totally necessary. For the hoisin sauce, you could omit it and add more soy sauce. For the sriracha, you could omit it for a less spicy recipe, try another chili sauce accessible to you in its place, or experiment with some red pepper flakes or chopped chili if you're hoping for spice but can't find a sauce 😊 We hope you enjoy the recipe!
