This recipe is suitable for both breakfast and dinner. The butter beans and sweet cherry tomatoes are coated in a slightly spicy harissa sauce and served on a bed of tangy coconut yogurt alongside some warm, toasted pita bread. This recipe is a journey through mouth-watering flavours!

Ingredients

  • 2 tsp (10 mL)
    olive oil
  • 1
    small onion, sliced
  • 1
    clove garlic, crushed
  • 1
    yellow bell pepper, chopped
  • 1½ cups (255 g)
    cooked butter beans
  • 10
    cherry tomatoes, halved
  • 2 Tbsp (30 mL)
    harissa sauce, more to taste
  • ¼ tsp
    salt
  • ⅛ tsp
    ground black pepper
  • ½
    lemon, juiced
  • ½ cup (120 mL)
    unsweetened coconut yogurt
  • ½
    avocado, sliced (optional)
  • 2
    small pita breads, toasted

Directions

  1. Heat a large pan on medium-high heat and add the oil, onion, garlic, and bell pepper. Cook for 3 - 4 minutes, until softened.
  2. Add the beans, tomatoes, and harissa*, and cook for 3 - 4 minutes. Deglaze the pan with a small splash of water if necessary.
  3. Season with salt and pepper, and stir in the lemon juice.
  4. Divide the coconut yogurt between your plates, top with the harissa beans, some avocado slices, and serve with toasted pita. Enjoy!

Notes

  • * Harissa offers a deep tangy and spicy flavour, but add less if you'd prefer less heat.

Storage

  • The beans can be stored separately from the other components in an airtight container in the fridge for up to 3 days.

Hi pick-up limes! I love your youtube channel and your recipes! I tried this one but I replaced the beans with chickpeas, and it was delicious! So simple but full of flavor. I added tomato paste and a bit more spices (paprika, smoked paprika, chili powder and chili flakes) and it added a lot more flavor (recommend you try it!)

Hey MaΕ‚gorzata, we haven't tried it ourselves but we have seen some recipes that use equal parts water or oil and harissa powder as a substitute for sauce. For example, 1 tbsp water and 1 tbsp powder for 2 servings of this recipe. Just in case, we'd recommend starting with less and adding more to taste as needed. Joan may also have some insight πŸ˜ƒ

I just had to return and leave another comment as this dish has become a firm favourite in our house and I've been making it at least twice a week since discovering it! I've continued to add mushrooms and substitute the bell pepper for a poblano. I like to cook the onion/mushroom/poblano mixture down until the mushrooms get a hint of gold and the onions and poblano become a little jammy. It's so tasty that I'm salivating even just writing about it; I honestly can't recommend this recipe highly enough! 😊

Thanks again for a delicious dinner! I am not sure what kind of harissa you find in the Netherlands though but with the one I find in France, there's no way I could use 2 Tbsp of it! haha The one we have here is almost like wasabi in strength, we have to dilute it in broth first (I usually live in the UK and the one I find there, I can easily use half of the jar because it's not spicy at all). So I only used a tiny bit this time and added a tin of diced tomatoes so I had lots of sauce to go with the pita bread :)

Hey Aurora, sometimes the sauces can vary, although were you using harissa paste instead of sauce by any chance? We've found that harissa sauce is better for less spice since it has more oil diluting the harissa compared to more concentrated pastes. Love the addition of diced tomatoes though and we're so glad it was still enjoyed in any case πŸ˜ƒ

Hey Marianna, a tomato-based sauce works nicely as a non-spicy substitute if desired. You could also experiment with a less spicy bean paste, garlic, or lemon-based sauce depending on your preferences πŸ™‚

I'm a turtle in the kitchen so this took me close to half an hour to cook, but it was well worth it! We loved it, and my husband has requested it again for dinner tonight!

I ended up substituting the bell pepper for a big portobello (150g) that I sauteed with the onion. Next time I'll add in some jalapenos too (I wasn't sure how spicy our harissa was and didn't want to overdo it).

I'm just wondering where the 19g of protein in the nutritional breakdown comes from? I used a 400g tin of Annalisa cannelini beans which yielded 240g of beans at 8.3g of protein per serve. The pita were only 3.7g per serve and I don't see the capsicum, tomatoes or coconut yoghurt providing more than 3g or so. πŸ€” Will have to think of ways to sneak in a little extra.

Hey Danielle, we're so glad the labour of love was worth it! The nutrition information provided is an estimate based on the United States Nutrient Database (https://fdc.nal.usda.gov/). We also aim to weigh our ingredients directly where possible. The protein in our beans is similar to yours, although it sounds like our pitas may have been a tad higher in protein. It's natural for there to be some variation between brands and sizes πŸ™‚ The other ingredients, such as onion and avocado will also provide a little protein.

In case you're interested and haven't already seen it yet, our protein article has some ideas related to increasing protein intake (https://www.pickuplimes.com/a…). Perhaps adding some more vegetables, seeds, or serving the beans with soy yogurt or an alternative whole grain are some ideas to bulk it up πŸ˜ƒ

Thanks for the suggestions! I found a different brand of wholemeal pita that has 10g of protein per serve, but I'm thinking this would also be fantastic served with quinoa. Unfortunately I can't find any soy yoghurt locally; I might have to try making my own!

We had this again tonight and I substituted the capsicum with a poblano (and also kept the mushrooms I added last time). It was even better than last time! This recipe is definitely a keeper and we'll be making it often! Thanks again, PUL team! 😊

I made this with white beans and even added mushrooms and snow peas for extra veggies and it turned out sooooo good, I put the bean and veggies mixture in a wrap with lettuce and I loved it, super flavorful <3

This looks incredible! Any suggestions on what I could substitute the bell pepper for (strangely I'm 'allergic' to bell peppers - causes vomiting - but I'm fine with tomatoes and chillis)? I was thinking I'd just add additional tomatoes and some jalapenos?
