This smoothie is perfect for those who aren't a fan of banana, but who want a creamy and filling smoothie. The beets add a slightly earthy flavour, but you'd never be able to guess that that smoothie is made creamy with frozen zucchini!
Add all ingredients to a blender and blend until smooth. Serve and enjoy immediately.

Definitely made me feel as if I was drinking a PB&J - and though I could notice the beet, overall it was a background note. Interesting and have already made it a few times!
Did 2 tbsp cashews and used those cooked Love Beets (1/2 beet), milk was homemade unsweetened almond/coconut. This is DELICIOUS!!! Going in the regular rotation for sure.
"mmm. Refreshing and creamy" was my partner's review this morning. I had no idea you could use frozen zucchini as a smoothie ingredient. I'm going to start sneaking it into more smoothies from now on. Especially if we're out of frozen bananas. I changed the recipe slightly. I used unsweetened soy milk instead of coconut milk, roasted beet instead of raw, and also added a couple of fresh dates and a nob of fresh ginger.

Hey Jo, thanks for sharing your experience with the smoothie - we're so happy to hear! Love the modifications as well 😃
When I made this today, I halved the recipe so it would only make a single serving - I also froze the ingredients ahead of time in an attempt to have them prepped and easy to grab. Adding the 3/4 c of coconut milk to the frozen ingredients wasn't enough liquid at all. I added a bit more of the coconut and some water to thin it out, and it turned out okay but it is still a bit chunky. Anyone else have this experience and know how to resolve? Should I thaw the ingredients before blending?
The taste is amazing, though. This is my dream smoothie! Thank you!

Hey Tara! We'd recommend adding more liquid and blending for longer if using more frozen ingredients to promote a smoother consistency. Allowing the ingredients to thaw slightly can help too though. Your blender might also have different blend options, such as a "pulse" function which helps get rid of chunks. We hope this helps for now and are so glad the smoothie was enjoyed 😃
It is currently -4 F as I'm making this smoothie. A cold breakfast, but worth it! I get so excited by the vibrant color! It's going into my body aswell as my kids! Feels like I'm giving us a much needed nutrition boost during our cold, dark Winters!

Awe we're so glad it's being enjoyed, Amanda! Sending you warm and bright vibes for winter 🤗
Incredibly filling yet fresh smoothie! I didn’t have to add granola to feel satisfied. I agree with previous reviewers that it’s wonderful to consume vegetables in this way. It’s interesting that the sweetness and flavour of the berries completely overtake the veggies’ ditto. However, without removing an earthy tone in the background 👌🏻. I used lemon and lime juice instead of orange, as the orange season has ended. It added a fresh touch to it all. I’ll try with orange when the season starts in October/November again

Such an incredible review, Louise, thank you for sharing! It's so fun to experiment and see how much we can pack into smoothies 🤗 We hope the recipe is just as enjoyable with orange when they're in season :D
Yummy as always, Sadia! I appreciate the amount of veggies in this smoothie. I always try to do a breakfast smoothie with a lot of vegetables in the spring and summer, but the green smoothies can use a lot of greens and get quite expensive. This smoothie tastes great and hits all the right nutrition notes for me at the same time! :)

We appreciate this so much, Mallory! We love smoothies in spring and summer as well ✨🌻
This was a delicious snack today! I used a banana and blueberries because I didn't have zucchini or raspberries, but it turned out great! I love a smoothie with beets :)

Delicious smoothie! I left out the zucchini and it was still creamy. I'm definitely making this again.

Really nutritious, maybe my beet was too big but that’s all I could taste. Might decide to try again with much less beets

I've fallen in love with the taste. It's so... unusual. But so addictive 😍
This smoothie is delicious, thank you! The colour makes me so happy and I love the added veggies :)
