Banana Coconut Lime Sorbet

This picture was taken about 1.5 years ago. I never got around to posting it. 


You see, I actually started PUL in January 2015. It was a blog I kept mostly to myself, and the link to which I shared with a few close family members and friends. There was always a vision for wanting to do more with it, but I didn't know exactly what. I would post new recipes every couple weeks, and then disappear for a few months, come back again for a couple weeks, rinse and repeat.


I'm one of those people that believes things happen for a reason. If there's a little voice inside that says to follow a certain path, or pursue a certain ambition, then it's important to listen to that voice. And it doesn't mean you have to know what it is or where it will take you. It doesn't mean it will all come together in a few months or a few years even. It just means you're staying true to your calling and making time, when you can, for that thing that really makes your spirit smile. 

So was the lime deliberate, given the name of the blog? Oh you bet! 

And it was inspired by the song:

 

"She put the lime in the coconut she drank them both up" ~ Harry Nilson

 

A silly song... but a great song. 

Nothing ever wrong with a little bit of silly, right? 

 Dietitian's recommendation: this sorbet is ice cream soft-serve consistency. If you want it to be more firm like regular ice cream, place in the freezer for about 2 hours to Harden before serving. 

 

It's starting to feel a whole lot like summer, wouldn't you say?

Banana Coconut Lime Sorbet 

Recipe PDF

▸ ▹ Vegan, gluten-free, oil-free, refined sugar-free, nut-free

Yield: 4-6 servings 
Prep Time: 5 min
Total Time: 5 min

 

INGREDIENTS 

1 can (400mL) full-fat coconut milk

3 peeled, frozen ripe bananas 

1 medium lime, juiced

1/4 tsp ground cinnamon 

 

Directions

1. Add all ingredients to a food processor and blend until smooth.

2. To make it a firm ice-cream consistency, place in the freezer for one to two hours before serving. Enjoy!

 

Notes

  1. Variations: add any fresh or frozen fruit you’d like, such as oranges, pineapples or mangoes. 

  2. Storage: store in an air-tight container in the freezer for up to two weeks.
