Snow Melon & Rainbow Swiss Chard Green Juice

Swiss chard is always hidden in kale’s glorious shadow. The vitamins and minerals in these green leafs is unreal!

I made this drink after taking part in a 5-hour canoeing excursion in order to raise money for Ronald McDonald House. I know, I know: McDonald’s? Sadia raising money for McDonald’s?

It was for a good cause. When kids are sick and are taken to BC Children’s Hospital their parents often come to stay with them at night, several nights, or even several weeks. The beds in the hospital for families are less than ideal, and often these parents come from far away places given this is the only hospital for children in all of British Columbia and the Yukon combined. Needless to say some parents have no place to stay and hotel bills can become costly.

The Ronald McDonald House is a rather beautiful facility on the hospital grounds that serves as a hotel get-away for parents, but the rooms still cost about $75 per night. Some families just don’t have enough money to afford it given they are usually already taking time off work, have to pay travel expenses, medical expenses, etc.

The purpose of this canoeing trip was to raise and donate money to an account reserved specifically for low-income families that need a night’s rest, while still remaining in close proximity to their sick child(ren).

The canoe is called The Voyager (cool name, right?) and holds 10 people.

Yes, we went in the rain. We got drenched. It was awesome.

Needless to say, I felt like I was about to develop a cold when I woke up the next morning. So I made this:

Dietitian's Intermission: 2 cups of this juice is only 100 calories and provides you with 200% Vitamin C, 700% Vitamin A and 1300% Vitamin K needs for the day.

Dietitian's Proposition: Drop the Vitamin C tablet if getting sick and drink this juice instead for additional vitamins, minerals, antioxidants, and hydration that a tablet can't possibly provide.

Bye-bye cold and hello sunshine!
