    dry penne pasta
  • 1 tsp (5 mL)
    olive oil

    small onion, thinly sliced

    cloves garlic, minced
  • 1 cup (227 g)

    red bell pepper, chopped
  • ¾ cup (101 g)
    green olives, pits removed
  • ½ cup (85 g)
    canned artichoke hearts, drained, chopped
  • ⅓ cup (50 g)
    sun-dried tomato in oil, drained, chopped
  • 2 cups (528 g)
    pasta sauce
  • 10
    cherry tomatoes, halved
  • 1 tsp (1 g)
    dried oregano
  • 1 pinch
    salt, or more to taste

  • fresh basil

Make your own



  1. Cook the pasta according to package directions, and drain when al dente.
  2. In a large pan on high heat, add the oil, onion, and garlic and cook for 2 minutes.
  3. Add the vegan chorizo, bell pepper, olives, artichokes, and sun-dried tomato and cook for another 2 minutes.
  4. Finally, add the pasta sauce, oregano, cherry tomatoes, salt, and pepper. When hot and bubbling, remove from heat.
  5. Top the drained pasta with chorizo pasta sauce, garnish, and enjoy!
