This bolognese sauce uses our Vegan Tofu Chorizo as the 'meat' substitute in the pasta sauce. It's a recipe that comes together incredibly quickly and easily.

  • 2½ cups (238 g)
    dry penne pasta
  • 1 tsp (5 mL)
    olive oil
  • 1
    small onion, thinly sliced
  • 2
    cloves garlic, minced
  • 1 cup (227 g)
  • 1
    red bell pepper, chopped
  • ¾ cup (101 g)
    green olives, pits removed
  • ½ cup (85 g)
    canned artichoke hearts, drained, chopped
  • ⅓ cup (50 g)
    sun-dried tomato in oil, drained, chopped
  • 2 cups (528 g)
    pasta sauce
  • 10
    cherry tomatoes, halved
  • 1 tsp (1 g)
    dried oregano
  • 1 pinch
    salt, or more to taste

Optional garnish

  • fresh basil
  • sliced green onion
  • toasted pine nuts

Make your own


  1. Cook the pasta according to package directions, and drain when al dente.
  2. In a large pan on high heat, add the oil, onion, and garlic and cook for 2 minutes.
  3. Add the vegan chorizo, bell pepper, olives, artichokes, and sun-dried tomato and cook for another 2 minutes.
  4. Finally, add the pasta sauce, oregano, cherry tomatoes, salt, and pepper. When hot and bubbling, remove from heat.
  5. Top the drained pasta with chorizo pasta sauce, garnish, and enjoy!

This is probably my favorite pasta dish, even as a non-vegan :). All the ingredients are so flavorful. Also, definitely include the pine nuts as a topping!

Oh, how i've missed Bolognese since I cut meat from my diet 5 or so years ago. But this really hit the spot! And my partner, who does have meat occasionally, also loves this dish as well. Any excuse I can have to use olives, I am into it. 😂
