  • ½ cup (120 mL)
  • ½ cup (112 g)
    granulated sugar
  • mango, peeled, chopped
  • 1
    lime, juiced
  • ½ tsp
    ground ginger (optional)

Optional garnish

  • fresh mint
  • lime zest
  • pomegranate seeds

  1. Start by making a simple syrup solution by placing the water into a saucepan on medium heat. Pour the sugar into the middle of the water and let it dissolve*. When the sugar is completely dissolved and the water is clear, remove from the heat and let sit to cool.
  2. To a blender, add the mango, lime juice, ginger, and simple syrup. Blend on high until smooth.
  3. Transfer to an airtight container and let freeze before enjoying.

  • Freezing can dull flavours and make frozen treats brittle and icy. The sugar in the recipe helps resolve both of those issues!
  • The ginger powder is subtle, so if you want more of a kick, add in grated fresh ginger or fresh ginger juice. If you're not a fan of ginger at all, just skip it in this recipe.
  • * Try to avoid mixing with a spoon, as the sugar will crystallize on the spoon and sides of the pan. To stir, swirl the pot.

  • Can be kept in an airtight container in the freezer for 1 - 2 months. Allow the sorbet to defrost at room temperature slightly before enjoying for a softer texture if desired.

Absolutely delicious! Only note that you shout defrost it for a moment before enjoying it. (Makes it easier to eat, instead of having a giant block of ice)
