  • 1⅔ cups (399 mL)
    canned full-fat coconut milk
  • 3
    frozen bananas
  • 1
    lime, juiced
  • ¼ tsp
    ground cinnamon

Directions

  1. Add all ingredients to a food processor and blend until smooth.
  2. To make it a firm ice-cream consistency, place in the freezer for one to two hours before serving. Enjoy!

I made this according to the recipe and served with grilled mangoes.

Not unpleasant but seemed to runny and not sweet enough. I'll try the leftovers with more banana. I think maybe almost double ...

I was curious how this would taste and oh my it is delicious. I was surprised how the banana compliments the other ingredients so well. I feel like I'm on a tropical vacation...lol! I will say that this is more like a milkshake consistency rather than sorbet after first making. If you do put it in the freezer it would be more of sorbet texture. They say when making nice cream don't use liquid because than it won't be ice cream texture. This was a soupy consistency. Regardless it's amazing and I would make again.

To help with the texture, using medium-sized frozen bananas (at least 7" long) and juice from a medium lime may help if less frozen banana or excess lime juice was added. Freezing the mixture is indeed recommended for a thicker texture of desired. Happy cooking ☺️
