This is lemonade with attitude. It's like a mix of ginger beer and lemonade: tangy, spicy and just a tiny bit sweet.

Ingredients

  • 1 Tbsp (6 g)
    freshly grated ginger
  • 20
fresh mint leaves, or more as desired
  • 3
    lemons, juiced
  • 3 cups (720 mL)
    water
  • 2 cups (222 g)
    ice cubes
  • 2 Tbsp (30 mL)
agave syrup, plus more to taste

Directions

  1. Gather the grated ginger into your hands and squeeze over a pitcher to extract the juice*. Discard the pulp. For a more subtle ginger flavour, simply cut the ginger into slices and add it to the pitcher, instead of grating and squeezing.
  2. Add the mint to the pitcher, and use a wooden spatula or wooden tamper to give the mint a mash. We want to bruise the mint leaves slightly to extract their flavours.
  3. Then add the lemon juice, water, ice cubes, and syrup. Stir, add more syrup if the drink tastes too tart, and serve immediately. Cheers!

Notes

  • * Squeezing the ginger by hand can irritate your skin, especially if you have any cuts. Alternatively, you can use a nut milk bag to squeeze out the liquid or place the ginger into a juicer.

Storage

  • The ginger, lemon juice, and syrup concentrate can be prepared and kept in a mason jar in the fridge for up to 2 days. Simply dilute with water and ice cubes when you're ready for a refreshing drink.

It’s cool, refreshing, not too sweet and it’s got a little bit of a kick to it. 😋 I might have drank all the 3 serving at once 😅

Sounds like it might be time to make more, Margaret 😜

Jeanelle Grima - July 15, 2021, 7:09 p.m.

this drink is so refreshing and simple to prepare...one question pls..... where does the 15mg sodium come from? Is it good for people with high BP? Thanks

PUL Team - July 18, 2021, 2:07 a.m.

Hi Jeanelle! Based on the USDA nutrient database, It looks like the sodium comes from the agave syrup, mint, ginger, and lemon juice. Do kindly note that the nutrition information may vary depending on the amount, type, and brand of items used though 🙂

Thank you for the ginger tip, Sadia! Mind-blowing! :-D

Lucy - July 10, 2021, 5:37 p.m.

This is great! Do you think this could work in a beverage dispenser? Any adjustments? maybe not the ice?
- Thanks!

PUL Team - July 15, 2021, 4:31 p.m.

Hi Lucy! The beverage should work in a dispenser, what a lovely idea 😍 You may want to remove the seeds from the lemon garnish to help prevent the dispenser from getting blocked. Adding more ice cubes are you serve it may also be helpful to prevent the drink from diluting too much 😊

Cris s - July 1, 2021, 6:50 p.m.

Sarah B - June 10, 2021, 4:41 p.m.

I made this and drank it instead of my morning tea and wow! Its so refreshing. I substituted honey for agave as it was what i had on hand. I will continue to make this for the summer months
