These mushrooms looked absolutely adorable on my lig cake! Any way to make them less sour? The vinegar is quite potent here.

The vinegar is there to help stabilize the aquafaba, but it shouldn’t taste sour. If it came through strongly, a few tweaks should help next time. You can reduce the vinegar to ½ tsp without affecting the structure, or swap it for lemon juice, which tends to taste a bit softer once baked. Making sure the sugar is fully dissolved is also key. Adding it slowly and whipping until the mixture is very glossy helps balance any acidity ☺️

I struggled a bit getting my mushrooms as even as pictured, but anything looks like a mushroom if it has a cap and a stem. Very tasty and surprisingly little work.
