Ingredients

  • 14 oz (400 g)
    pre-cooked udon noodles
  • 2 Tbsp (28 g)
    unsalted vegan butter
  • 7.1 oz (200 g)
    shiitake mushrooms, sliced
  • 2
    stalks green onion, sliced
  • 1 Tbsp (15 mL)
    dark soy sauce
  • 1½ Tbsp (22 mL)
    mushroom stir-fry sauce, plus more to taste
  • ½ tsp
    garlic powder
  • ¾ cup (105 g)
    frozen shelled edamame

Directions

  1. Fill a saucepan with boiling water, and add the udon noodles. Cook for 2 minutes, then drain.
  2. Meanwhile, add the butter and mushrooms to a large pan on high heat. Cook until the mushrooms are lightly golden, about 4 minutes.
  3. Add the drained noodles, green onion, soy sauce, mushroom sauce, and garlic powder. Cook for 1 minute.
  4. Lastly, add the edamame beans and cook until heated through. Enjoy!

What would be a good substitute for mushrooms? I really don’t like them but want to give this a try since the rest sounds quite tempting

Hey Loh, you can try substituting the mushrooms with chopped bell peppers for a similar texture. We also like to add grated carrots or shredded cabbage to our noodle dishes. They'll soak up the flavours well and add a nice crunch. ☺️

amazing 10/10 🤩 we used mixes asian mushrooms (king oyster, shimeji and enoki) instead of the shiitake mushrooms and it turned out perfect !

:-) I had the half of all the ingredients needed, but still with that it was super delicious.
I took champignons, soja salt-reduced, chopped garlic and green onions.
Great recipy! Next time I'll be more organized.

So good! I usually hate mushrooms but they were so good in this. Shiitake mushrooms were hard to find but they were so tasty. Will definitely make this instead of takeout any day!

Thank you for something that is so quick but still has flavour and nutrition. As another user suggested I used some radish but I cooked them as they were going off. These mixed with some rolled dried tofu (not sure of the name but it's the long tubes of dried tofu from my local asian supermarket) worked a treat. I had to use dried shiitake mushrooms. Will definitely be making it again.

I added some sweet chili sauce because the dish felt a little unbalanced. Next time, I'd defrost the edamame and measure out all the sauce things ahead of time so the noodles wouldn't get as soggy/overcooked as mine did.

Hey James, we get our udon noodles from our local Asian supermarket, but perhaps you mean the colour of the final dish? If so, using using dark soy sauce (rather than regular soy sauce) is what helps to contribute to the deep colour of the final dish. I hope this helps for now 😊

I am so so obsessed with this recipe!! Somehow even “quick” recipes always end up taking me much longer than they’re supposed to (maybe I’m slow at chopping?) but this one is actually lightning fast to make! I’ve made it twice already and I’m always surprised by how quickly it comes together and how flavourful it is despite the minimal ingredients! Like others have mentioned I wasn’t able to find mushroom stir-fry sauce where I live so I just used a generic one. I also subbed in portobello mushrooms because my grocery store didn’t have shiitakes. I scaled the seasonings up to 1.5tbsp soy sauce, 2.5tbsp stir fry sauce, and 3/4tsp garlic powder, and used twice the vegan butter. This has definitely become an instant staple for me, thank you so much!! ❤️

Tasty! I didn’t have the mushroom stir fry sauce so I experimented. Instead of adding the soy sauce and stir fry sauce, I used the whole sauce mix recipe from one of my favorite recipes by pickuplimes- the spicy garlic tofu dish- and I think it worked out pretty well.

This is just lovely and so quick to make. I discovered mushroom stir fry sauce a while ago and am always happy to find new recipes using it. I used button mushrooms instead of the shiitake and had the noodles with a side salad. Delish!!

- teriyaki sauce
- miso sauce
- stir-fry sauce
- a mix of hoisin and soy sauce with garlic and sweetener added
- bulgogi sauce
